做法:洗(xǐ )净宰好(hǎo )鲫鱼,洗净淮山(shān )和薏米。用清水把陈皮泡软,拍裂一小(xiǎo )块姜(jiāng ),热锅,用姜(jiāng )块在锅上擦(cā )一遍,放两勺(sháo )油(yóu ),待油六成热下(xià )鱼,煎(jiān )至(zhì )微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其他材料,武火煮沸,转中小火(huǒ )煲一个半小时,下盐(yán )调味即可品尝。 -
