做(zuò )法:洗净宰好鲫鱼(yú ),洗净淮(huái )山和薏(yì )米。用清水把陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜块在锅上擦一遍,放两勺(sháo )油,待油六成热下鱼(yú ),煎至微黄(huáng )。煮沸瓦煲里(lǐ )的清(qīng )水,放入煎(jiān )煮好的鲫(jì )鱼和(hé )其他材料,武火(huǒ )煮沸,转中小(xiǎo )火煲一(yī )个半小时,下盐调味即可品尝。 -
